{"id":9380,"date":"2014-11-08T06:00:48","date_gmt":"2014-11-08T11:00:48","guid":{"rendered":"http:\/\/candostreet.com\/blog-parents\/?p=9380"},"modified":"2014-11-04T16:18:00","modified_gmt":"2014-11-04T21:18:00","slug":"the-fda-ensures-foods-from-animals-are-safe","status":"publish","type":"post","link":"https:\/\/candostreetny.com\/blog-parents\/the-fda-ensures-foods-from-animals-are-safe\/","title":{"rendered":"The FDA Ensures Foods from Animals Are Safe"},"content":{"rendered":"<h1><a href=\"https:\/\/candostreet.com\/blog-parents\/wp-content\/uploads\/2014\/11\/burgers-and-kids.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-9390\" src=\"https:\/\/candostreet.com\/blog-parents\/wp-content\/uploads\/2014\/11\/burgers-and-kids.jpg\" alt=\"animals\" width=\"276\" height=\"187\" \/><\/a><\/h1>\n<h1><span style=\"color: #003366;\"><em><strong>In case you were wondering, the Food and Drug Administration (FDA) wants you to know that it ensures foods from animals are safe.<\/strong><\/em><\/span><\/h1>\n<p><span style=\"color: #003366;\">If you eat meat or drink milk, you want to know: Are there trace amounts of the veterinary drugs used in food-producing animals entering your diet? And if they are, are the amounts safe for human consumption?<\/span><\/p>\n<p><span style=\"color: #003366;\">Those questions\u2014among others\u2014are the concern of the Division of Residue Chemistry, which is part of FDA\u2019s Center for Veterinary Medicine.<\/span><\/p>\n<p><span style=\"color: #003366;\">Sick food-producing animals such as pigs, cows, and chickens can be given antibiotics or other drugs to treat diseases. (Some farms also give animals antibiotics to help them grow faster, <a href=\"http:\/\/www.fda.gov\/AnimalVeterinary\/SafetyHealth\/AntimicrobialResistance\/JudiciousUseofAntimicrobials\/\"><span style=\"color: #003366;\">a practice FDA is working to eliminate<\/span><\/a> by promoting the judicious use of antimicrobials in food-producing animals.) Producers must then wait for the drug to leave the animal\u2019s system before they can slaughter it for consumption. It\u2019s important to ensure that any remaining trace amounts of the drugs are safe to eat by the time the food reaches our plates.<\/span><\/p>\n<h2><span style=\"color: #003366;\"><em><strong>\u201cOur job is twofold,\u201d says Division Director Philip Kijak, Ph.D. \u201cWe validate the methods drug companies use to test for drug trace amounts in foods from animals, and we help develop newer and better methods for testing.\u201d<\/strong><\/em><\/span><\/h2>\n<p><span style=\"color: #003366;\">On the first point, the sponsor\u2014usually, the animal pharmaceuticals company\u2014of a drug to be used in a food animal must complete required testing that establishes the drug\u2019s tolerance (a measure of safety), and develop a method to show whether the trace amount in the animal food product is within that tolerance.<\/span><\/p>\n<p><span style=\"color: #003366;\">\u201cThen we are responsible for validating that method\u2014making sure not only that it works and is accurate, but that it\u2019s a practical method any standard chemical laboratory can use,\u201d Kijak says.<\/span><\/p>\n<p><span style=\"color: #003366;\"><strong>Making Sure Milk Is Safe<\/strong><\/span><\/p>\n<p><span style=\"color: #003366;\">For example, the Division examines the methods used to test milk for trace amounts of veterinary drugs used in dairy cows.<\/span><\/p>\n<p><span style=\"color: #003366;\">Under the Grade \u201cA\u201d <a href=\"http:\/\/www.fda.gov\/downloads\/food\/guidanceregulation\/ucm291757.pdf\"><span style=\"color: #003366;\">Pasteurized Milk Ordinance<\/span><\/a> standards issued by the FDA and the U.S. Public Health Service, all milk must be tested for beta-lactam antibiotics, the most common drugs used by dairy farms. FDA\u2019s role is to evaluate <a href=\"https:\/\/candostreet.com\/blog-parents\/wp-content\/uploads\/2014\/11\/kids-drinking-milk.png\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright wp-image-9392 size-thumbnail\" src=\"https:\/\/candostreet.com\/blog-parents\/wp-content\/uploads\/2014\/11\/kids-drinking-milk-150x150.png\" alt=\"Animals\" width=\"150\" height=\"150\" \/><\/a>and approve the data and methods submitted by companies that manufacture rapid-screening tests for these drugs. Rapid screening is important because milk is perishable, and results are needed on the spot.<\/span><\/p>\n<p><span style=\"color: #003366;\">\u201cThink of these as off-the-shelf kits, like those consumers buy for pregnancy testing,\u201d Kijak says. It\u2019s up to the individual dairies and state regulators to choose the approved kits they want to use. Since 1994, when FDA began evaluating test-kits, the amount of milk containing beta-lactam drugs has dropped from 0.15 percent to 0.014 percent\u2014more than a tenfold decrease, Kijak adds.<\/span><\/p>\n<p><span style=\"color: #003366;\"><strong>Developing Methods to Test Meat<\/strong><\/span><\/p>\n<h3><span style=\"color: #003366;\"><em><strong>In addition, FDA works with the U.S. Department of Agriculture\u2019s Food Safety and Inspection Service (USDA\u2019s FSIS) and state regulators to monitor meat, poultry, eggs, and milk for trace amounts of unapproved or unsafe drugs. FSIS tests the foods for a variety of these medications and reports violations to FDA, which follows up with regulatory action when needed.<\/strong><\/em><\/span><\/h3>\n<p><span style=\"color: #003366;\">\u201cTo do this job, we had to focus on developing new methods to detect trace amounts of penicillin and other antibiotics,\u201d Kijak says. \u201cWith the older method, we were able to tell if penicillin or penicillin and other drugs were present, but we were unable to measure the exact amount of the penicillin when the sample contained more than one drug.\u201d Without this specific information, it was possible for products with unsafe amounts of penicillin to pass inspection. The newer method, which was developed in close cooperation with USDA, enables inspectors to determine if multiple drugs are present, and the amount of each.<\/span><\/p>\n<p><span style=\"color: #003366;\"><strong>Testing for Fungus in Animal Feeds<\/strong><\/span><\/p>\n<h3><em><strong><span style=\"color: #003366;\">Recently, the division has become increasingly involved in developing methods to detect mycotoxins and other contaminants in animal feeds. Mycotoxins are toxic compounds made by fungi that grow on grains.
